Description:
This special herb and pepper seasoning is designed for making Vietnamese-style salt-cured chicken. A blend of mineral salt, aromatic herbs, and distinctive peppers creates a rich, savory flavor and fragrant aroma.
The seasoning is especially suitable for preparing gà ủ muối hoa tiêu, a Vietnamese-style salt-cured chicken dish.
Directions:

Clean the chicken thoroughly and rinse with salted lemon water. Drain well.

Mix the entire package of seasoning with 10–11 liters (2.6–2.9 gallons) of water in a large pot. Stir until the seasoning is evenly dissolved.

Place 5–7 whole chickens into the seasoned water. Make sure the chickens are completely submerged. Marinate for 4 hours.

Bring the pot to a boil, then reduce the heat to maintain a gentle simmer. Cook uncovered for 30–40 minutes, depending on the size of the chickens.

Increase the heat and let the water boil for about 10 seconds. Turn off the heat, cover the pot, and let the chicken rest for 30 minutes in summer or 40 minutes in winter.

Remove the chicken and allow it to drain and cool. For best color and freshness, vacuum-seal the chicken once cooled.

Refrigerate for about 1 day before serving for a firmer, crispier texture.
